Mini Swedish Meatballs

Mini Swedish Meatball is one of the most delicious meatballs he has to eat for me. Tiny structure saves the trouble of splitting. Hope! A ball has already gone into the stomach. It is incredibly easy to feed to children. The sauce is made with broth and does not contain any additives since it is thickened with flour.

How to make Mashed Potatoes ?

Peel and chop 1/2 kg potatoes. Place potatoes into a large pot and fill with enough water to cover the potatoes. Place over high heat and bring to a boil. Continue to boil until potatoes are fork tender, 10 to 15 minutes. Remove potatoes from heat and drain. Add butter and cream to the potatoes and season with salt and pepper. Using a potato masher (or hand mixer) mash potatoes until you get your desired consistency. Adjust seasonings. Cover and set aside.

1/4 çay kaşığı öğütülmüş hindistan cevizi
2 yemek kaşığı çok amaçlı un
600 ml ılık sığır suyu
2 yemek kaşığı krema, isteğe bağlı
Üzeri için taze kekik

Hazırlanışı

  • Fırını 190˚C'ye ısıtın.
  • Köfte için: 1 dilim ufalanmış ekmeği ve sütü geniş bir karıştırma kabına alın, karıştırın.
  • Ekmek sütü emerken, 2 yemek kaşığı tereyağını sos tenceresinde eritin. Soğan ve sarımsak ekleyip 3-4 dakika veya soğan yarı saydamlaşmaya başlayana kadar sote edin. Ateşten alın ve ekmek ve süt karışımına ekleyin. Karışım yaklaşık 5 dakika soğumaya bırakın.
  • Sığır eti, kuzu eti, yumurta, tuz, karabiber, yenibahar ve muskatı karıştırma kabına ekleyin ve iyice karıştırın. 2 çay kaşığı büyüklüğünde köfteler hazırlayın ve bunları 1,5 cm aralarında bir parşömen kaplı fırın tepsisine yerleştirin, daha sonra 10 ila 12 dakika  kadar köfteleri pişirin.
  • Sos için: Kalan 1 yemek kaşığı tereyağını büyük bir tencerede orta ateşte eritin ve unu ekleyin. Ham un tadına gidip hafif kokusu çıkana kadar karıştırmaya devam edin. Et suyunu yavaşça karışıma dökün ve tüm topakların kaybolduğundan emin olun.
  • Tuz ve karabiber serpin. Sosun bir tahta kaşık arkasını kaplayacak kadar kaynamaya ve koyulaşmasına izin verin. Ateşten alın ve kremayı karıştırın.
  • Köfteleri sosu ilave edip bir araya getirin.
  • Patates püresini kepçe haline getirin ve geniş bir tabağa koyun ve üzerini sosla kaplı mini köfte ile karıştırın. Üstüne fazladan sos ekleyin ve taze dilimlenmiş chives ile bitirin.

Dried Tomato and Omelette Sandwich

Ciabatta with omelet, cheese and dried tomatoes. I don’t know about you, but if you think of a picnic sandwich, you can put this omelette sandwich in your picnic bag and hit the road.

Plaid , basket and omelette sandwich. After long walks, we give you a recipe for your packed lunch in the shade of a tree. It will be a complete picnic classic for your children.

Of course you can customize the ingredients of your sandwich. But let’s say sometimes it is better not to spoil the essence.

2 slippers
2 eggs
30 g of grated Parmigiano Reggiano
3 tablespoons of milk

Steps

  • Break the eggs into a bowl. Add the milk and start to beat. Add the cheese and stir. Season with salt and pepper.
  • Heat a non-stick pan, add a knob of butter and pour in the egg mixture. Cook 2-3 minutes and then cover with a lid. After 1 minute, turn the omelette and complete the cooking according to the desired consistency.
  • Open the slippers and spread one half with the goat cheese. Place half of the omelette on each sandwich, complete with some dried tomatoes and serve.
  • If you want a stringy omelette, add the diced scamorza cheese to the omelette as well as the grated Parmigiano Reggiano.

Lemon Ricotta Pancakes (Vegan + Gluten-Free)

Ingredients

  • 1 1/2 cups gluten-free 1-to-1 baking flour
  • 1/2 cup whole grain teff flour
  • 1 tbsp gluten-free baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp fine grain sea salt
  • 1/8 tsp ground nutmeg
  • 2 flax eggs (2 tbsp golden flaxseed meal + 6 tbsp water; stir and let sit for 5 minutes)
  • 3 tbsp organic brown rice syrup
  • 1/2 cup almond milk ricotta (I used this brand.)
  • 1/2 tsp organic lemon extract
  • 1 1/2 cup + 3 tbsp plant milk
  • 1/4 cup fresh lemon juice
  • 2 tbsp lemon zest
  • vegan butter or oil for the pan (I like using avocado oil.)

Instructions

  1. In a large mixing bowl, sift together the gluten-free 1-to-1 baking flour, teff flour, baking powder, baking soda, nutmeg and fine grain sea salt. Gently stir to combine and set aside.
  2. In the bowl of a stand mixer with a whisk attachment (or in a large bowl with a whisk), whisk together the flax eggs, brown rice syrup, ricotta, lemon extract and plant milk of your choice. It’s okay if there are a few tiny lumps from the ricotta, but be sure to break up any large lumps.
  3. Remove the bowl from the stand mixer and add the flour mixture a bit at a time. Stir the batter to combine. Then stir in the lemon juice and lemon zest.
  4. Allow the batter rest at room temperature for at least 15 minutes and up to 30 minutes. While the batter is resting, preheat a large skillet over low heat.
  5. When you are ready to make your pancakes, evenly coat the pan with a small amount of vegan butter or oil. (To determine if the skillet is warm enough, you may wish to make a mini-pancake as a test. You can always turn the heat-up/adjust as necessary.)
  6. Scoop 1/4 cup of pancake batter into the skillet and spread it into a circle using the side of your measuring cup.
  7. Cook each pancake for 2-3 minutes on the first side or until edges are golden brown and small bubbles begin to form and pop; then flip the pancake with a spatula. Cook the pancake for a minute or so on the other side. Repeat until there is no batter left.
  8. Serve pancakes topped with fresh fruit, lemon zest, mint leaves and maple syrup as desired. Enjoy!

Cloud Eggs

Fluffy and snowy eggs are joyfull for a sunday breakfast menu.

Ingredients

8 large eggs
1 c. freshly grated Parmesan
1/2 lb. deli ham, chopped
Kosher salt
Freshly ground black pepper
Freshly chopped chives, for garnish

Steps

  1. Preheat oven to 450° and grease a large baking sheet with cooking spray. Separate egg whites and yolks, placing egg whites in a large bowl and yolks in a small bowl. Using a whisk or hand mixer, beat egg whites until stiff peaks form, 3 minutes. Gently fold in Parmesan and ham and season with salt and pepper.
  2. Spoon 8 mounds of egg whites onto prepared baking sheet and indent centers to form nests. Bake until lightly golden, about 3 minutes.
  3. Carefully spoon an egg yolk into center of each nest and season with salt and pepper. Bake until yolks are just set, about 3 minutes more.
  4. Garnish with chives before serving.
