Of course you can customize the ingredients of your sandwich. But let’s say sometimes it is better not to spoil the essence.
30 g of grated Parmigiano Reggiano
3 tablespoons of milk
100 g of goat cheese
6 dried tomatoes in oil
- Break the eggs into a bowl. Add the milk and start to beat. Add the cheese and stir. Season with salt and pepper.
- Heat a non-stick pan, add a knob of butter and pour in the egg mixture. Cook 2-3 minutes and then cover with a lid. After 1 minute, turn the omelette and complete the cooking according to the desired consistency.
- Open the slippers and spread one half with the goat cheese. Place half of the omelette on each sandwich, complete with some dried tomatoes and serve.
- If you want a stringy omelette, add the diced scamorza cheese to the omelette as well as the grated Parmigiano Reggiano.
