Of course you can customize the ingredients of your sandwich. But let’s say sometimes it is better not to spoil the essence.
30 g of grated Parmigiano Reggiano
3 tablespoons of milk
100 g of goat cheese
6 dried tomatoes in oil
Break the eggs into a bowl. Add the milk and start to beat. Add the cheese and stir. Season with salt and pepper.
Heat a non-stick pan, add a knob of butter and pour in the egg mixture. Cook 2-3 minutes and then cover with a lid. After 1 minute, turn the omelette and complete the cooking according to the desired consistency.
Open the slippers and spread one half with the goat cheese. Place half of the omelette on each sandwich, complete with some dried tomatoes and serve.
If you want a stringy omelette, add the diced scamorza cheese to the omelette as well as the grated Parmigiano Reggiano.
