In white chocolate, walnuts, peanuts, pine nuts, coconut raspberries or melon, papaya, orange or lemon, all kinds of sugar will look good. Also candied flowers are a good choice to beautify your mendiants. Candied rose petals or violets will give your mendiants a flamboyant touch. But be careful, 3-4 different materials per Mendiant are enough, otherwise it will be a bit overdone.<\/p>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-text-3\"><p>120 g white couverture<br \/>\n120 g whole milk couverture<br \/>\n120 g dark chocolate couverture<\/p>\n<p>Dried fruits and nuts as desired, eg: freeze-dried raspberries, pistachios, cashews, sultanas, dates, ginger, dried cranberries or sour cherries, peanuts, etc.<\/p>\n<p>Classic for Quatre mendiants: hazelnuts, almonds, figs and raisins<\/p>\n<\/div><div class=\"fusion-title title fusion-title-3 sep-underline sep-dotted fusion-title-text fusion-title-size-three\" style=\"--awb-text-color:#000000;--awb-sep-color:#6b6464;\"><h3 class=\"fusion-title-heading title-heading-left\" style=\"margin:0;\">Steps<\/h3><\/div><div class=\"fusion-text fusion-text-4\"><ul>\n<li>Read the dried fruits and nuts, remove the peel, possibly roast and put everything ready.\u00a0If necessary chop chocolate for tempering.<br \/>\nLay out the work surface or a sheet of siliconized baking paper.\u00a0If necessary, make a template with 12 circles of 5 cm diameter and place under the baking paper.<\/p>\n<p>Temporarily temper the chocolates for each variety of Mendiants.<br \/>\nMelt 90 g of chocolate over the water bath (maximum 60 \u00b0 C) and heat to the desired temperature.\u00a0Add the remaining 30 g of chocolate to the melted chocolate and allow to cool to the desired temperature while stirring.\u00a0Then heat the chocolate to working temperature, which only takes a few seconds over the water bath.<\/p>\n<p>Temperatures (or follow the table on the packaging of the chocolate):<\/p>\n<p>Dark chocolate couverture:<br \/>\nmelt and heat to 55\/58 \u00b0 C.\u00a0Then cool with the remaining chocolate to 28\/29 \u00b0 C and bring just above the water bath to working temperature 31\/32 \u00b0 C.<\/p>\n<p>Whole milk couverture:<br \/>\nmelt and heat to 45\/50 \u00b0 C.\u00a0Then cool with the remaining chocolate to 27\/28 \u00b0 C and bring just above the water bath to working temperature 29\/30 \u00b0 C.<\/p>\n<p>White couverture:<br \/>\nmelt and heat to 45\/50 \u00b0 C.\u00a0Then cool with the remaining chocolate to 26\/27 \u00b0 C and bring just above the water to 28\/29 \u00b0 C working temperature<\/li>\n<\/ul>\n<\/div><div class=\"fusion-sep-clear\"><\/div><div class=\"fusion-separator fusion-full-width-sep\" style=\"margin-left: auto;margin-right: auto;margin-top:10px;margin-bottom:10px;width:100%;\"><\/div><div class=\"fusion-sep-clear\"><\/div><div
