Watermelon Mocktail

A mocktail can best be described as a cocktail without the liquor, using juices, sodas, infused waters and many other non-alcoholic ingredients to provide flavor. Generally, a mocktail is made fresh at a restaurant’s bar, as opposed to a soda or other drink that is ready as soon as it’s poured from the fountain or container – although exceptions can easily arise. Modern mocktails tend to have a sense of sophistication that’s shared with their alcoholic counterparts and use a variety of ingredients to cover a spectrum of flavors.

Watermelon is a delicious and refreshing fruit that’s also good for you.
It contains only 46 calories per cup but is high in vitamin C, vitamin A and many healthy plant compounds.

Ingredients

Watermelon Fizz Mocktail
~2.5 lbs seedless watermelon (1/2 of a mini “personal” watermelon)
1 lime
1 cup mint leaves, loosely packed (plus extra for garnish)
generous splash of kombucha or sparkling water (experiment with flavors!)

For Serving
crushed ice
watermelon slices for garnish
mint sprigs and/or edible flowers for garnish

How to make

Centrifugal Juicer Method

1) Cut the watermelon into medium-sized pieces (carefully removing the rind). Cut the peel away from the lime.

2) Add about half of the watermelon to the juicer*, then the mint, followed by the lime and the rest of the watermelon (collecting the juice in a pitcher). Set the watermelon juice aside. (If you wish to strain any remaining pulp, use a fine mesh sieve to do so before pouring your watermelon juice into glasses.)

3) Add crushed ice to your glasses. Pour 2-4 ounces of watermelon juice in each glass. Top with kombucha or sparkling water. Garnish as desired and serve. Cheers!

Blender Method

1) Cut the watermelon into medium-sized pieces (carefully removing the rind). Add the watermelon pieces and mint leaves to a powerful, high-speed blender. Whirl away for about a minute or so, or until watermelon is completely smooth and juicy. Strain the juice through a fine-mesh sieve into a pitcher to remove any undesired pulp and/or mint leaves.

2) Roll the lime against the countertop a few times (to help prime it for juicing) and then cut it in half. Use a wooden reamer, citrus squeezer, hand juicer (or your hands), to squeeze lime juice into the pitcher. Give the watermelon juice a stir with a large wooden spoon or spatula.

3) Add crushed ice to your glasses. Pour 2-4 ounces of watermelon juice in each glass. Top with kombucha or sparkling water. Garnish as desired and serve. Cheers!

Watermelon and Feta Salad

Watermelon and Feta Salad is very simple, tasty and refreshing. You can prepare a perfect summer salad for BBQ, picnics and parties.

The watermelon I bought was incredibly juicy and sweet. One slice filled the whole salad bowl, the secret of this salad watermelon, cucumber and cheese to chop the same size cube. You can choose the cheese according to your taste. If your cheese is hard, chop the cube and add it to your salad. If you want to use a soft cheese, you can tear it with your hands and it won’t matter.

Ingredients

  • 5 cups watermeloncubed
  • 2 large cucumberspeeled, sliced and quartered
  • 1 1/4 cups fetacubed
  • 2 tbsp fresh mintfinely chopped

Dressing

  • 1 tbsp olive oil
  • 1 limejuiced
  • 1 tsp honey

Steps

  1. Whisk the dressing ingredients together in a small bowl.
  2. Stir the watermelon, cucumber, mint and dressing together in a large salad bowl. Add the feta and gently stir to combine.

Bubble Tea

Bubble tea (also known as pearl milk tea, boba milk tea, or simply boba) is a Taiwanese drink that was invented in Taichung in the 1980s. Typically, tea is mixed with milk or fruits and topped off with chewy tapioca balls (bubbles, boba, pearls).

You can make also classic tea or slush, milk tea or punch—and more. All drinks can be customized in three steps: Topping Level, Sugar Level, and Ice Level. Toppings range from bubbles and popping bubbles to different types of beans and jellies

Bubble Tea is the name given to the wide variety of refreshing flavoured fruit teas and milk teas served ice cold or piping hot with chewy tapioca balls that you suck up through a big fat straw! Yum – It’s like a quirky snack and drink in one!

Ingredients

8 bags of black tea
4 cups just boiled water
3/4 cup quick-cooking tapioca pearls
whole milk to serve (or your choice of milk)
simple syrup to serve (or your choice of sweetener)

For the Simple Syrup

1 cup water
1 cup sugar

Steps

1) Prepare the tea: Steep the tea bags with 4 cups of just boiled water. Let the tea sit until it reaches room temperature. There’s no need to remove the tea bags from the water as the tea is steeping. You can stick the tea in the fridge to speed up the cooling process.

2) Prepare the simple syrup (if using): Add the water to a saucepan and heat the water until it starts to simmer. Add the sugar and stir until the sugar dissolves. Remove the saucepan from heat and let the simple syrup cool before transferring to a jar.
Cook the tapioca pearls: Bring about 4 cups of water to boil and add the tapioca pearls. Stir the pearls and let them cook for about 5 minutes. The pearls should have floated to the top by now. Drain and rinse the pearls under cold water. Transfer them to a bowl.

3) Assemble the drinks: Divide the cooked tapioca pearls into 4 large glasses. Next, add a few ice cubes to each glass. Pour 1 cup of the tea into each glass. Add 1 1/2 tablespoons of milk and 1 1/2 tablespoons of simple syrup into each glass. Stir and taste the milk tea. Add more milk or simple syrup to your taste. If you are serving the beverage to guests, have a small pitcher of milk and jar of simple syrup ready so that they can adjust the drink to their taste. The drink is usually served with large boba straws (large enough for the tapioca pearls to go through). If you don’t have the straws on hand, you can use spoons to scoop out the tapioca pearls.
